In Search of The Best Latke Recipe

The perfect latke is in here somewhere.

Hanukkah, the Jewish Festival of Lights, begins on December 8th. In my household, we make latkes or potato pancakes, a traditional food for this holiday. My daughters are now at an age where they can help out in this very messy and time-consuming process, but I am in charge of providing the recipe.


I have yet to settle on the perfect recipe. Every year I search online and in cookbooks hoping to find an even better recipe that the one I used the past year. My problem is that I often forget which one I used. So I’ve decided to ask for some help. Please send the Forest Hills Connection your favorite recipe. It will make my job so much easier.

One of the secrets I have learned is after grating potatoes in the food processor and rinsing them in cold water until it is clear, use a salad spinner to remove as much of the water as possible. If I am particularly ambitious I even squeeze out more moisture using kitchen towels.
